Hi Jay, here’s my lemon cake recipe – it’s even good for you as it’s made with olive oil !!!!

Need: 2 eggs / 125g caster sugar / grated rind of 2 lemons and juice of one / 200ml olive oil / 2 x tbsp milk / 175g self raising flour, sifted / icing sugar to decorate.

Method: Preheat oven to 190 degreesC / 375 F – Gas Mark 5.

Grease and line the base of 25cm loose-bottomed cake tin with baking parchment. Beat together the eggs and sugar in a large bowl.

Beat in the lemon rind and juice, olive oil and milk. Stir in flour, then spoon the batter into the cake tin and bake for 30-35mins.

I then leave to stand for a few minutes then fork all over the top and spoon the juice of the 2nd lemon all over – then dust with icing sugar. Make tea – YUM!
